Tarragon Chicken Salad

Almonds and tarragon make ordinary chicken salad extraordinary. Make it easy - pick up a precooked roasted chicken!

Yield: Serves 4

Ingredients

3 cups diced cooked chicken
1 cup chopped celery
1/2 cup sliced or slivered almonds, toasted
2 Tablespoons fresh tarragon, OR 2 teaspoons dried tarragon
pepper, to taste
mayonnaise, to taste
lettuce
croissants, rolls or bread

Directions:

Combine all ingredients in a mixing bowl. Serve chicken salad on a bed of lettuce or on your favorite bakery bread, roll or croissant.

Serve with sliced fruit.
